1 cup plain yogurt or non-dairy sour cream
1/3 cup tahini
2 to 3 Tbsps. lemon juice
1/2 tsp. cumin
1/2 tsp. garlic salt
1/4 tsp. coriander
1/4 tsp. sugar
1/4 tsp. black pepper
1/8 tsp. cayenne
1 ripe avocado
Lemon juice
2 navel oranges
1 pomegranate
Butter lettuce
1. In medium bowl, combine yogurt and tahini; whisk until blended. Add lemon juice, cumin, garlic salt, coriander, sugar, pepper, and cayenne. Blend well. Taste; adjust seasonings if needed, adding more lemon juice or sugar.
2. Peel avocado; remove pit, slice into rings, and sprinkle with lemon juice. Peel orange and slice crosswise. Cut pomegranate in half and remove seeds in a bowl of cold water. Arrange butter lettuce on large platter; top with avocado and oranges. Scatter pomegranate seeds over all. Serve with yogurt tahini dressing.
